ScottoJonno’s New Drink List Celebrates the Mysteries of Naples

The latest menu at ScottoJonno continues its tradition of embracing the mysteries of Naples, but this time with a twist—infusions of Asian ingredients that take the concept even further.

Set in Galleria Principe, within the historic walls of what was once the Treasury of the Banco di Napoli, ScottoJonno is part of a sprawling 600-square-meter space. Since 2023, this venue has housed a historic library, a restaurant, a café-bistro, and, of course, the ScottoJonno cocktail bar—named after Vincenzo Scotto Jonno, who opened the original café chantant here in 1883. Like any top-tier bar, the venue boasts a constantly evolving menu of signature drinks. The latest edition introduces eleven new recipes, each with its own story.

“Every drink is the result of meticulous experimentation in our lab,” explains Bar Manager Mirko Lamagna. “We use cutting-edge tools like centrifuges, rotovapors, ultrasonic sonicators, and homogenizers to create clarified juices, redistilled spirits, aromatic extractions, and infusions.”

Luca Jannuzzi, the entrepreneur behind the restoration of the former Treasury, adds: “The soul of ScottoJonno remains deeply rooted in the mysteries and legends of Naples. But now, the menu also embraces global cultures and traditions, as highlighted by the Asian influences woven into the drinks.”

Four Highlights from ScottoJonno

ScottoJonno’s latest drink list showcases recipes that tell stories and legends from Naples through unique flavors and innovative techniques. One standout is the Ballo delle Ombre, inspired by the ghostly legends of Capodimonte. This clarified cocktail features cognac, shochu, yuzu, milky oolong tea, and coconut milk, served with an edible obulato sheet and garnished with edible flowers.

Another highlight is the Canto della Sirena, a tribute to Partenope, the mythical siren symbol of Naples. This drink blends scotch whisky, coconut water kombucha, and shiso leaves, capturing the allure and seduction of the siren’s song.

Il Sussurro, dedicated to the skull of Santa Luciella, uses enoki mushroom-redistilled gin, banana, kiwi, and vermouth to symbolize a connection with the underworld. The sweetness evokes the idea of unexpected gifts from the afterlife, while the vermouth adds an elegant touch.

A Toast to Naples’ Mysteries

Finally, the Elisir di Port’Alba takes inspiration from the tragic tale of Maria, a red-haired young woman turned vengeful witch due to a curse. This cocktail reflects her rebellious spirit with a “fake tomato” symbolizing illusion.

Its base is a mix of Japanese botanical gin, cachaça, and oloroso sherry, elevated with tomato and passion fruit. The passion fruit, along with hazelnut paste, is cleverly hidden inside the faux tomato, creating a visually and flavorfully striking experience.
