For Riccardo Bucci and Lorenzo Falasca, the masterminds behind this experience, the magic of the hours between 10:00 PM and 5:00 AM lies in capturing the cerebral energy of sleep and transforming it into a new bar ritual. The evening begins softly, almost stealthily, only to unfurl into a bolder, surreal experience — a blend of classic charm and club-like vibrance.
With a unique vision for curating Rem’s offerings, Bucci and Falasca orchestrate the night in four distinct phases, each marked by shifting atmospheres, colors, music, and drink menus.
Rem Trastevere and The Night’s Four Phases
Guests are invited to savor and fully embrace the moment that captivates them most and, perhaps, let themselves be guided into the following chapters of the night. “It all begins at 10:00 PM with Awake, where soothing blue lights and chill-out music set the tone in an intimate, exclusive ambiance — a perfect retreat for unwinding with an after-dinner drink,” says Bucci.
“Here, the drinks take center stage with calming ingredients and attentive table service — a consistent theme that carries into the next phase, Light Sleep. This is where memories take over, with a soundtrack of 80s and 90s hits, green lights washing over the walls, and drinks designed to evoke the essence of travels and destinations that have left their mark on us,” Falasca explains. Take Freedom, for example — a reimagined Daiquiri inspired by Tel Aviv, where exotic spices and Tajin merge seamlessly with an 8-year-aged rum.
Deep Sleep, the Techno Phase
“At 2:00 AM, we shift into Deep Sleep, a state of deeper, dreamless rest. Here, the energy heightens as we step off the familiar path,” Falasca continues. “We’re not leading guests toward the end of the night but rather inviting them to play, to become a part of it. This is the point where, if woken, one would feel completely disoriented — and Rem unveils its grand transformation.” The space pulses with red lights, morphing into a club where techno takes over. The service flows between table and standing, less focused on drinks and more on fostering interaction.
