SubAstor, the dark and elegant award-winning speakeasy bar of Sao Paulo, has announced the launch of its brand new cocktail menu. Following the success of their latest drink list, the team has focused on the diversity of Brazil’s different natural habitats. Named “Biomes of Brazil – sixth generation”, the new drink list features twelve concoctions created by the bar’s team led by Bar Manager Alex Sepulchro and Director Fabio La Pietra.
SubAstor, the New Liquid Concept
Playful, creative and elegant, the new cocktail menu aims to showcase the best of this incredible South American land: the drinks are all influenced and inspired by the six main terrestrial Brazilian biomes that are Amazon, Caatinga, Cerrado, Atlantic Forest, Pampa and Pantanal.
Different techniques have been used by the team to represent some of the main flavours of the regions, translating them into exciting ingredients for these new cocktails. The menu is divided in two parts, Biomes of Brazil – representing the Biomes with six delicious drinks, and SubClassics – where classics are reinvented, seen through a Brazilian lens.
The Drink List
From the menu, a team’s favourite drink is Pantal, made with awamori, sake, camomille, sweet potato, champagne acid, pequi, and tomato water. Truly representing the Pantal biome is the ingredient Pequí: commonly used in a form of oil for its anti-inflammatory benefits, it’s an aromatic fruit with a distinct citrusy and cheesy flavour.
Another incredible drink is Amazonia, made with gin, amaro bianco, guava nectar, falernum, rhubarb, chlorophyll, and mastruz butter. From this biome, the team wanted to showcase Mastruz, a very important medicinal herb, also used in other regions. It brings a grassy and herbal profile, that works extremely well and brightens up the cocktail.
La Pietra’s favourite drink is definitely Cerrado. From this cocktail, which is a long drink
made with tequila, bacuri, coconut oil, and um coffee co. pink bourbon cold brew, the ingredient that speaks for the biome is Bacuri. Refreshing and with a very distinctive flavour, bacuri is used in the drink mainly for it’s fruity and floral profile with a hint of fresh almond aftertaste.
A flight of stairs from Astor, the bar is a cozy and intimate place where to enjoy unique cocktails created to showcase the local culture. In the years the team led by Fabio La Pietra has evolved the concept pushing the boundaries.
The bar now wants to represent and pay respect not only to the local culture and biodiversity, but the whole country’s. By showcasing the richness of Brazil’s biodiversity, SubAstor gives the opportunity to its guests to travel the land of the Amazon forest north to south, and experience the best it has to offer.
